Here is a Beetroot Raita recipe with step-by-step photos and a video link. This recipe is one of my favorites from the kitchen. Beetroot is considered a super-food and is packed with essential nutrients like vitamin C, B6, folate, and minerals like magnesium, copper, iron, potassium, phosphorus, and manganese. Curd, as we all know, is associated with many benefits, such as good immunity, stronger bones and teeth. It also helps to lose weight and helps build strong immunity.

This power-packed Beetroot Raita recipe is quick and easy to make and can be prepared in just 10 mins. For this beet raita, I have used boiled beets, which have been boiled with the skin off for only three minutes. I have boiled the beets only for cleaning and not for cooking purposes. If your idea is to cook it, you must boil it for 30 to 45 minutes. I like to eat beets raw since raw beets contain more vitamins, nutrients, and antioxidants as compared to cooked beets. An alternate way is to roast the beets or saute it since the procedure helps keep its nutrients.

You may add a variation to the recipe by adding grated cucumber or carrots, along with the beets. Also, tempering is optional, I do it with every raita that I make since that adds a lot of flavor to the recipe. You may or may not want to include grated ginger in the tempering, that’s completely your choice.

Ingredients

Main Ingredients

  • 1 Cup Grated Beetroot
  • 1 Cup Curd
  • 1 tsp Chaat Masala
  • 1/4 tsp Black Salt

For tempering:

  • 1 tsp Ghee/ Clarified butter
  • 1 tsp Cumin seeds
  • 1/2 tsp Black Mustard seeds
  • 1 tsp Grated ginger
  • 5 to 6 qts Curry leaves (Fresh/ Dry)
  • 1/4 tsp Asafoetida/ Hing

Instructions

  • Grate peeled and boiled beetroot, which has been boiled for 3 minutes. You can take 1/2 to 1 cup grated beetroot for 1 cup curd.
  • Mix grated beetroot with curd.
  • Add black salt.
  • Add Chaat masala and Jeera Powder or either of the two will also suffice the purpose and give a good taste to the raita.
  • Mix all the ingredients really well.

Tempering

  • Now, for the tempering, take ghee/ clarified butter in a pan.
  • Add cumin seeds once the ghee/clarified butter gets heated.
  • Add small black mustard seeds to it.
  • Add grated ginger. This step is optional.
  • Add curry leaves- fresh or dry, whichever is available
  • Add Asafoetida( Hing.)
  • Saute the mixture for a minute on slow to med flame.
  • Add the tempering to the curd.
  • Mix everything really well and garnish with coriander leaves.
  • Serve and enjoy this health recipe.

Notes

  1. Tempering of the Raita is general and can be done as per choice. I enjoy adding grated ginger in the tempering. You may or may not add it as per choice.
  2. We can also prepare carrot and cucumber Raita in the same way. You may skip the boiling stage and follow the same instructions.
